Sabas’ and Francisca’s love for the land began in a small town in Oaxaca, Mexico. There, they learned to farm sustainably, live organically, and rely on what they grew. In 2010, they began immersing themselves in every stage of olive farming, from nurturing the trees to learning the harvest and understanding the milling process. As they discovered the health benefits of high-quality olive oil, their curiosity grew into a passion for producing oils that support healthier living for families like ours.
Guided by their farming roots and commitment to mindful, organic living, they set out to create something people could trust. That vision led to the creation of SABAS, a small, family-run business built on integrity and care.

Balsamic Vinegar
Balsamic vinegar is one of the great culinary treasures of Italy, with roots reaching back nearly a thousand years. Born in the province of Modena, it began as a precious, patiently crafted vinegar reserved for noble families and special occasions. Over centuries, it became a symbol of Italian craftsmanship carefully aged, thoughtfully blended, and cherished for its depth, sweetness, and unmistakable richness.
Today, balsamic vinegar remains a product where tradition matters just as much as technique. True balsamic begins with grape must, the whole grape, gently crushed and simmered until it becomes a thick, fragrant concentrate. This must is then aged in a sequence of wooden barrels, where time, evaporation, and the characteristics of each type of wood slowly transform it into something extraordinary. The longer it ages, the richer and more complex it becomes, with some of the world’s finest balsamic aging for decades.
At SABAS, we proudly source from a family-owned producer in Modena whose craft has been passed down through generations. What drew us to them wasn’t just their history, it was their unwavering commitment to purity and authenticity. They grow their own grapes using organic methods, allowing them to control every detail from soil to barrel.
